7 years old


I had planned to put the cake on the table and set up a nice photo without clutter in the background. But then I wasn't thinking and I lit the candles while the cake was still on the stove. T. ran over to blow them out, and the wax was dripping already, and that's why you get to see all the stuff on my counter. Like the bananas that are going to be turned into banana bread when I get around to it. And the dry-pack can of oats that's only a couple of months past the "best by" date, so we decided to try using it, and I put some in the meatloaf today and none of us are sick, so now we have a whole can of oats to somehow use as quickly as possible, even though none of my kids will eat oatmeal. And the decorative Christmas popcorn tin that someone gave us a month ago -- it's empty now, but A. wanted to keep it because it has puppies on it, and I still haven't cleaned it out, and now that I'm writing this and looking at the picture, I'm reminded that A. is in bed asleep and if I go down right now and put the tin in the outdoor trash can, she will probably never notice, since she doesn't read this blog (as far as I know). Ah, the evil plans of moms.

Meatloaf is an excellent idea. Other ways to use oats:

Oatmeal cookies (I like the recipe on the back of the Quaker can, but with 1/2 the sugar and twice the cinnamon)

Grind 'em up in the Vitamix about a cup at a time. Makes a sort of chunky flour. Good to use in pancakes.

Along the same lines, leftover cooked oatmeal is good mixed up in pancakes.

Ditto waffles.

Homemade granola.

Muffins.

I bet you could use the flour in pizza dough or breads.

I'm so sorry that your children don't like oatmeal. It's totally a staple at our house. My kids have it at least 3 times a week for breakfast. We add applesauce, honey, or homemade jam to sweeten it and they love it, especially with cinnamon and raisins.

About that tin...you're so evil! Bwahahaha ;D

I think you should be proud to even have dry storage that you are using. Oh and as the cannery specialist for my ward I know that the expiration just means you will get the most nutrional value before that date! It won't hurt ya unless of course there were bugs which I find hard to believe! How about some no bake cookies. YUM!

I have put WAY too many things in garbage cans when the kids aren't looking. At least your bananas for banana bread look in better shape than the ones on my counter (I think I have procrastinated way too long.) We like to grind up the oatmeal and put them in choc. chip cookies. Just add the same amount of flour as you do ground up oatmeal. (Sneaky, of course--but I have to stick the good for you stuff in somehow. . . )

Those are all great ideas. I hadn't even thought about grinding the oats up to make flour. I think that will be the easiest way to use it. I'll make some cookies and I bet the kids will quickly become converted to the concept. :-)
